INGREDIENTS
- puff pastry frozen – 1 sheet
- tomatoes – 1-2 sliced
- basil leaves – few (or herb of your choice; we used some basil, some coriander)
- peppers – 3 different colours julienne d and cut in the middle, about ⅛ each colour, you can use more
- red onion – ¼ of an onion sliced
- shredded cheese of your choice – 3-4 tbsp (I used mild cheddar)
- sesame seeds – 2 tbsp
- milk – 2-3 tbsp
- oil to grease the tray
- plain flour for dusting
METHOD
- allow the frozen puff pastry sheet to defrost slightly by placing it at room temperature for about 10 min, enough to enable you to roll it out
- meanwhile, slice you veggies, wash the herbs and keep them ready, pre heat the oven to 200C
- grease your baking tray with oil and keep ready
- flour the work surface with plain flour or maida. open out the frozen puff pastry. flour the puff pastry all over
- using a rolling pin roll it to make it slightly thinner (about ½ cm)
- using a knife or pizza cutter make 9 squares
- on each square using a pastry brush, coat the edges with milk
- now, spread shredded cheese over each piece, place the vegetables, sliced tomatoes over this. sprinkle sesame seeds
- bake in the pre-heated oven for 12-15 min or until the pastry has puffed up and browned slightly
- garnish with basil or coriander and serve tomato, pepper and herb puff squares hot or at room temperature
NOTES
Since it is mainly meant for kids, it is not spiced and hence mild. However, the green peppers give a lovely taste. You can add jalapenos sliced or perhaps red chili flakes or even green chili thinly sliced to spice them up OR serve with a spiced dip.
I made a few with tomato, peppers and basil, the rest with just peppers and herbs since my elder daughter dislikes tomatoes.
it took me just 12 minutes to reach the cooked stage. so keep an eye on the puffs. don’t let them burn
instead of milk, you can use egg yolks to brush over the pastry. this will give a nice golden brown colour while rolling it if it gets sticky dust the rolling pin also with extra plain flour
