Inspired by the flavours and cooking styles of the North-western regions of the subcontinent, Northwest sets one off on an exploratory culinary adventure through what was once the Gandhāra Province. A contemporary space with tantalising views of the grill kitchen, Northwest Kebabs & Curryhouse dishes out kababs and kadhais, the likes of which have seldom graced Indian tables. Expect a meal from Chef partners Sanjay and Shyam that’s at once familiar yet distinctive; packed with spices and flavours you’d find in Kashmiri, Pashtooni, Punjabi and Middle Eastern cuisines.
“We take food lovers back to soul cooking, using traditional cooking methods and invoking flavours that have been tried and tested through centuries of practice and perfection,” states Chef Sanjay Tyagi. Adds Chef Shyam Sunder, “We don’t resort to the concept of the “Base Curry” and every dish is prepared fresh using fresh ingredients and traditional recipes and methods of cooking. The food and drinks philosophy at Northwest are simple and delicious, straight from the heart.”
The chefs recommend grills from the Middle Eastern Charcoal BBQ, including melt in the mouth Behari Kebabs, Tabak Maaz, Chargha Murgh, and Paneer Parathdaar, seared to perfection on the open fire charcoal grill with a luxurious bronze-crust, tender taste and smoked aroma.
The Signature Shinwari Kadhai offers the meat or vegetables a unique flavour. Stir fried with smoked tomato puree and flavourings, these meats and vegetables are cooked as well as served in the Kadhai (Wrought Iron Wok) itself. The main course features some of Chef Sanjay’s best dishes including the silken Rogan-e-Nishat, which is an aromatic delicately flavoured variation of the popular Roganjosh, Murgh Musallam, a dish that has not graced the tables in many years in this true form, and also Chicken Haleem. Vegetarians have an excellent choice too, and they can indulge in a healthy and delicious Panch Saag made from five types of fresh greens, Methi Malai Kofta, Aloo ki katli, among many others. The gheelicious and butterlicious Dal Makhni and Makkhan Murgh Bharta or the Butter Chicken are also not to be missed. Do try the Samak ke Chawal ki Phirni or the Sheer Khurma also to end your memorable meal on a sweet note.
